Why Going Vegan Is One of the Most Powerful Things You Can Do for the Planet

If you've ever felt like one person's choices can't possibly matter against a problem as vast as climate change, there's a decision you make three times a day that says otherwise. It doesn't require a new law, a new invention, or a single dollar of investment. It's what's on your plate.


Food systems are responsible for roughly a quarter to a third of all human-caused greenhouse gas emissions, and animal agriculture is the single biggest driver within that number. That means what billions of people choose to eat isn't a side issue in the climate conversation — it's one of the main events. And the research on what happens when individuals shift away from animal products is now detailed enough to say, with real confidence, just how much of a difference it makes.


The Numbers Behind the Claim

One of the most comprehensive studies on this topic, published in Nature Food in 2023, tracked the diets of over 55,000 people in the UK for more than two decades and matched their eating habits to environmental data from nearly 40,000 farms across 119 countries. The result: people eating vegan diets had an environmental footprint that was a fraction of high-meat eaters' — about 25% of the greenhouse gas emissions, 25% of the land use, 46% of the water use, 27% of the water pollution, and 34% of the biodiversity loss.


Zoom out to the global food system and the pattern holds. The landmark 2018 Science meta-analysis by Joseph Poore and Thomas Nemecek — still the largest of its kind, covering 38,000 farms and 40 food products — found that meat and dairy supply just 18% of the world's calories and 37% of its protein, yet consume roughly 83% of all farmland and generate about 60% of agriculture's greenhouse gas emissions. Flip that around, and the implication is striking: if the world shifted to a plant-based diet, global farmland use could shrink by more than 75% — an area roughly the size of the US, China, the EU, and Australia combined — while still feeding everyone.


Separate modeling published in PNAS by Brown and Eisen estimated that a full global shift to plant-based eating could cut CO2 emissions by 68% by 2100, largely because land currently used for grazing and feed crops would be freed up to regenerate as forest, one of the planet's most effective carbon sinks.


Why Meat and Dairy Cost So Much More

The math isn't mysterious once you look at how animal products are actually made.

Raising livestock is fundamentally inefficient as a way of producing food:


  • It takes more land. Animals need land to graze on, and land to grow the feed crops that go into raising them — often both. A kilogram of beef protein typically requires vastly more land than the same amount of protein from peas or soy.

  • It takes more water. Growing feed crops, watering animals, and processing meat all add up. Beef in particular carries one of the highest water footprints of any food.

  • It emits more directly. Cattle and sheep produce methane through digestion — a greenhouse gas more than 80 times more potent than CO2 over a 20-year period. Methane from livestock is a major reason animal agriculture punches so far above its weight on climate impact.

  • It drives deforestation. Forest clearing for cattle pasture is estimated to account for around 80% of deforestation in the Brazilian Amazon, destroying carbon-absorbing ecosystems in the process.


Even the most efficient, lowest-impact animal farms tend to have a bigger footprint than the least efficient plant farms, according to Poore and Nemecek's analysis — the gap isn't about "bad" versus "good" farming, it's a structural feature of what it means to route calories and protein through an animal first.


It's Not Just Carbon

It's easy to let "climate change" become shorthand for carbon emissions alone, but the vegan diet's environmental edge shows up across nearly every measure we track:


  • Biodiversity. Agricultural expansion is the leading cause of habitat loss and species decline worldwide. Freeing up the roughly three-quarters of agricultural land currently devoted to livestock would be one of the largest opportunities for rewilding available to humanity.

  • Water pollution. Manure and fertilizer runoff from livestock operations is a major contributor to the "dead zones" and algal blooms degrading rivers, lakes, and coastlines.

  • Public health, at scale. A 2021 study from the University of Hong Kong and the University of Exeter linked meat production to an estimated 90,000 pollution-related deaths per year in China alone, largely from the air and water pollution associated with industrial animal farming.


What This Looks Like for One Person

Global statistics can feel abstract, so here's the individual version: using Harvard's diet footprint calculator, a person eating a vegan diet for a year produces an estimated 247 kg of carbon-equivalent emissions from food, compared to a US average of around 1,750 kg. That's not a marginal improvement — it's a footprint roughly seven times smaller.

You don't need to be perfect for this to matter. Research consistently shows environmental impact scales with how much animal-based food a person eats, not just whether they eat zero. Every meal swapped from meat or dairy to plants moves the number in the right direction, and the data shows those individual swaps add up to something genuinely significant when millions of people make them.


The Bottom Line

Climate change can feel like a problem too big for any one person to touch — solved only by governments, corporations, and international treaties. Diet is the exception. It's a lever that sits entirely in your own hands, that you get to pull multiple times a day, and that the best available science says has an outsized effect relative to almost anything else in your personal control.


Going vegan won't single-handedly reverse climate change. But stacked across a population, it's one of the most powerful, well-evidenced tools we have — and unlike most climate solutions, it doesn't require waiting for anyone else to act first.
